Ideas for cheese sauce for macaroni

My girlfriend and I always cook different noodle than the one is the mac and cheese boxes and just keep the noodles in sandwich bags. Does anyone know how to make easy cheese sauce so we can use up those noodles. It could be something you make from scratch or a product you can buy in the store.

I don't know how many noodles u have so i can't give u measurements but u can't beat homemade in my opiniom. Melt some butter in a pan , stir in enough flour , add milk & cheese & stir constantly over low heat till it thickens. Be sure & stir because it will scorch if u don't. Good luck. this is also good on broccoli & anything u like cheese on.

What kind of cheese do you use? Is it like shredded cheese,or block cheese, or velvetta?

This is the basic one my mother made. She did not make it that often as cheese was rather expensive and I use it to get rid of the odd pieces of cheese I have. I use a mixture of cheddar, and any other kind I have as well as parmesan. Last time I used cheddar and old feta cheese and it was quite good. I just fry onions until soft in some butter, I put in salt and pepper and touch of cayenne pepper then add a little flour, then the milk about half a cup then I grate some cheese in it. You have to use equal amount of cheese and milk and sharp cheese is the best. So if you use two cups of cheese you use two cups of milk and one quarter lb of butter or marg. and one quarter lb of onions. It is like making a sauce, you have to keep stirring until it thickens. Meanwhile you can brown bread crumbs about 1/2 c if you are using the recipe - in butter. So what you do is to grease an oven proof dish, mix the cooked macaroni with the cheese sauce and put it in the dish. I also may add a little cooked ham as well. and sprinkle the bread crumbs on top. Oven temp. 350 deg 20 to 30 mins. If you are lazy, you can also buy the powdered cheese mixture at a bulk store. But I think the regular recipe is much better, but you do buy a lot of cheese.
