For a grab and go breakfast I like to have some savory muffins in the fridge. My favorite recipe uses sharp cheddar cheese and a bit of bacon. You get those great flavors without a lot of fat and you can eat it while you drive to work.

I bake muffins at least once a week and I agree with you, they're great to keep around. I usually bake sweet ones, but keep them healthy by using Splenda or honey and adding high fiber ingredients and no fat or oils at all. You can skip the fat by using unsweetened apple sauce.

If you like scrambled eggs? Break the eggs and stir like you were preparing to make scrambled add onions chopped and chopped tomatoes and chopped jalapenos and stir oh add salt and pepper then scramble. Get a can of refried beans and make in a separate pan maybe you can add jalapenos to the refried beans and get some tortillas warm them and if you like potataoes you can fry some of them as well and you can either put it all together on a tortilla and have a egg, bean.and potato burrito or you can just have it all separate on a plate.

honestly I don't cook that much in the mornings... I hate all the dishes! We usually have toast w/ butter & jam, waffles w/ lite syrup, fruit, or dry cereal w/ milk. But my husband makes some devine omelets! Usually we'll add some of the veggies or meats left over in the fridge to it or to scrambled eggs. French toast is good too.
