I guess this is part of fancy baking (treats, cakes, etc), so there might be some school for becoming a baker that also offers courses on how to manufacture chocolates. In Holland there are courses for learning how to make Belgium Praliné by hand (those fancy chocolates, bonbons), but I am unsure if and where they are offered outside my own country. Hope that helps you out at least a little!
