Philippine Beef Stew

I love beef stew. More so if it has many vegetables in it (potatoes, bok choy/pechay, baguio beans, onion greens and corn on cob). I know Beef stew recipe varies depending on one's preference and availability of ingredients, however when my dad cooks it, there's always ginger in it. I don't have anything against ginger but in beef stew? I don't like it. Whenever I eat my dad's beef stew, I know it right away that there's ginger in it because of the subtle tinola taste in it. He says that it's a recipe in Visayas region. Anyone else here have experience beef stew with ginger? Is it normal? I don't think so.

hi there romeoratillajr, Just like you I also love beef stew. Well just like your dad my Mom is the same. She always put ginger in almost everything! And when I ask her why cause I really hate ginger she said because ginger not only adds flavor but it also takes away that malansa taste from meat so I guess its also normal that your beef stew has ginger. Well i really can't remember if our beef stew has one cause I really don't mind the other ingredients since i only eat the meat, i don't like veggies.. hahaha.. but i guess theres ginger in our stew too.. :D

you must like it. that is the main spice for any stew especially beef. don't you know that.. we called it inji. your dad may want his stew-taste fresh as freshly cooked. it is useful in food preservatives.
