What cause people to get ashy?

Lol don't you ever wonder what causes people to get ashy? I seriously have no idea how people get ashy, but I do know scratches and supposely cold weather (I think?) causes ashy skin, right? Would appreciate if anybody can provide me with information on this subject :) really would help
