Do you have any kitchen secrets you can share?

As the title states. This is the question. Let's pass our secrects on to others to help them. My kitchen secrect is I cook alot with cooking sprays. They greatly reduce the calories in any meal. I also love to try different spices with my dishes. Flavor is very important in any meal.

I have a couple of items that help me out. I have a microwave cooker (from pampered chef) that I use for cooking frozen veggies. I just cover them with water and micro for 5 minutes. I can do them early as the cooker will keep them warm. I also have a slicer thing that I use for slicing onions and potatoes (for fried potatoes yummy). I also brine chicken, you put chicken in container that will hold water, cover the chicken with water and sprinkle with kosher salt. Let it sit for at least a couple of hours then cook or bbq it will be really moist and yummy. For years I wouldn't eat BBQ chicken because it was so dry I could barley eat it. But this makes it great! I hope these couple hits help someone else.

That's a pretty good tip. For me, I use olive oil to replace vegetable oil or canola oil. Olive oil is good for the heart, and of course it's a much healthier than the regular oil. I put garlic in anything - that's another secret. Garlic is healthy, and adds another dimension to the dish. Especially for asian and italian dishes. Thanks for sharing!
