what's up for this bountiful holiday?

the chilly and somewhat bracing air of December best lends itself to hearty dishes that literally provide warmth.no wonder then that most of our holiday are made from expensive meats. however, we really need not to be extravagant in our choice of cuts. please suggest some meat dishes or sites that i can refer to that could readily give the impression of a bountiful season sans the expense. i also am needing great accompaniments for these cuts that are affordable and easy to prepare. please include the cooking time. thanks in advance.
