There's a lot to choose from on PS2 so I obviously won't be able to cover everything but here's some of the best from different genres: Fighting(3d): Soul Calibur 2 and 3 are both excellent 3d fighters. Although you can win on easier difficulties with just button mashing, at higher levels there's quite a bit of strategy involved in fights (with guard impacts etc...). Lots of great, memorable characters also Fighting(2d): Marvel vs Capcom is one of the best fighters of all time, however the PS2 version is rather rare and expensive. If you do happen to find it though it's well worth it with a huge cast of characters. Very fast-paced fights. And what's not to love about being able to play as Wolverine, Jill Valentine, SpiderMan and Ryu all in the same game. Action: Devil May Cry is no doubt one of the best series of action games on the PS2. First of all it's made by CAPCOM so you can obviously expect high quality. Very fun and exciting gameplay. Much less repetitive than other PS2 action games such as God of War (which is horribly overrated). Horror: Silent Hill 2 is a must play, even if you don't like horror games. The gameplay is fun on it's own, but the story is what makes Silent Hill 2 such a masterpiece. Also the game environments are very well designed and very creepy. Very creepy atmosphere overall. Also has the memorable and very iconic Pyramid Head in it. I'm not sure about other genres really... (All the RPGs, platformers etc.. I play aren't for PS2) so I'll just end with that

You can try The Bouncer. It's a pretty good beat-em-up game. It's kinda hard to find these days though.
