Quinoa

Quinoa is an ancient grain that is very high in protein. It contains the 8 essential amino acids, therefore making it a complete protein. It is also high in calcium and iron and a good source of Vitamin E and B Vitamins. I had it a few times as a side dish mixed with veggies and a little olive oil and spices. Recently I cooked some up and used it in cookies also with other grains and raisons. They were good and what a great way to eat this healthy grain.

Wow, quinoa is very popular here in Israel. We used to mixed it with cabbage which we cut into small pieces and petrozilla together with onions and presto we have a healthy vegetables salad for our meal. Happy healthy eating.

That sounds good! I love cabbage too. What is "petrozilla"? and "presto"? Or did you mean Pesto (basil, pine nuts). I want to start eating quinoa more regularly because it's so healthy. Great idea having it like you said....thanks for the idea!

Sorry for using the Hebrew name of parsley. In Hebrew we called it perozilla. We use to cut all vegetables into small pieces, like cabbage, red bell pepper, green bell pepper, carrots, parsley, onions and I say "presto" means in a short period of time we have a ready vegetables salad mixed with quinoa.

I use quinoa quite often in my menus. I substitute it for potatoes, pasta, rice and other grain foods. I found a great site to use for ideas. You might want to check it out. http://www.cookingquinoa.net/

Thanks! that's a great site....yummy ways to use quinoa. Me too I substitute it for rice, potatoes, etc. I also use whole-wheat couscous too as a substitute.
