Pasta Salad from the Store

I like to make my own pasta salad, but my boyfriend's decided he prefers the pasta salad from the grocery store, which is easy to make yet much more expensive.
It only has the pasta, green and red peppers, and some Italian dressing it seems.
However, the peppers in the pasta salad are a bit mushy. I guess he likes them that way...
Does anyone know how I can get my peppers to be not so crisp? Could I try letting them sit in the dressing for a couple hours to marinate and soften? Thanks for any tips!

Peppers can be softened with heat, either by boiling them or placing them other fire (in gas stoves you can do that). But another good way to have peppers handy is to slice or dice peppers, put olive oil to heat, throw in a glove of garlic and later the peppers when it zizzles. The olive will help you make the dressing (with oregano, vinegar or aceto balsamico, salt and pepper).

Awesome thanks for the tips. I have an electric stove so one thing I cannot do on it, unfortunately, is roast peppers. I did throw them in for a couple minutes with the pasta while it was finishing up cooking and they softened a bit. Thanks again!

I made a spaghetti salad this morning. It is now marinating in the fridge. If you let it marinate for about 24 hrs. (in 'fridge) the peppers will soak up the dressing and be less crisp. I put purple onion, green bell pepper, tomato, and shredded carrot in mine. Then add the dressing with a little celery seed and poppy seed with parsley flakes. Some people like to add gobs of stuff but I think my few ingredients make a better salad.

I usually make mine simple with a few ingredients like onions, broccoli, and a few other things, but I guess Bryan doesn't like it my way.
