Have you made any great meals lately?

I have made a few deeelish meals in the past week. I made a garlic parmesan chicken - I made the marinade using oil, garlic, italian seasoning, salt, parmesan cheese, let it sit for an hour, then baked the chicken and served it over angel hair, YUM! Another good one was homemade chicken teriaki. I like to throw things together and see what happens. Have you made anything great lately?

lately i've been using peasant food to make unnatural foods. well except my hamdogger and egg rapped hotdog.

Hello Tempkodah! Welcome to MyLot! What do you mean by peasant food, I have never heard of that before. Give some examples of unnatural foods. What is a hamdogger, a hamburger and hot dog mixed together? What exactly is an egg wrapped hotdog, just hotdog with an egg or something more complex? Thanks for sharing!

There have been a few that turned out beautifully, but my current favorite is pumpkin and black bean stew. You can use canned pumpkins and beans, but I used my Halloween pumpkin. Just roasted it, pureed it, then dumped it in the slow cooker with plenty of black beans, tomatoes, broth, and seasonings. It cooked just about all day and was so warm and spicy and sweet and savory, especially over sweet cornbread. Surprisingly filling too, and you can add meat if you like.

The way it tasted, it would probably do well with beef or lamb, since it was a pretty substantial stew. Chicken might get lost in it, lol. Although if you tweak the proportions and the seasonings used, you could really add any leftover meat you have on hand. The day after I made the stew last Thanksgiving, I added some leftover smoked turkey and boudin and it was lovely! It added an interesting texture and the rice in the boudin made it even more filling.

Wow that is a different dish! I like black beans, that sounds delicious over cornbread! What kind of meat would you add to that stew? Thanks for posting!

I´m basically on veggies now as I am trying the mediterranean diet. You can eat everything, but the quantities vary. So two days ago, one of my friends went with me to the hospital and we came home at lunch time. While she arranged some papers, I made a spinach and leek cream and a green salads with produce of my garden. The salad had arugule and different kinds of lettuce (all mine), diced sweet peppers and diced avocado and cold chicken and my dressing was with homemade croutons,olive oil, vinegar, grated parmesan cheese and dry oregano. The soup was made with the chicken broth I had. I cooked there the leeks and later the spinach, put skimmed milk and blended it. Croutons and parmsan cheese as topping too. YUMMY!!! We ate a green apple as dessert.

That sounds like a delicious meal, not to mention healthy too! I need to eat healthier again... Time to get back on track and eat more fruits and veggies, less snacks. We will be starting our own garden hopefull this fall. I can't wait to have our own veggies... yum! Thank you for sharing!

I made something I'm gona call pork rib pasta. I stir fried pork ribs with garlic and onion, then added a can of cream of chicken soup and half a cup of water and let it boil. Then I added a can of sweet peas and poured the mixture over some cooked egg noodles. Yum! It's so simple but tastes sooo good. It's probably one of the best meals I've come up with in the past month. I'm always trying new ideas and this one rocked.

It sounds good! We don't do lots of red meat, but I'll have to try that out sometime!
