Yum, yum I just LOVE prawn tempura!! Tempura's can be tricky but are not TOO difficult to make at home if you follow a few simple tips. The secret is to use to use really cold (preferably iced) water to make the batter - this stop the batter from absorbing too much oil. Also make the batter right before frying the tempura and do not (like some batters0 leave it to stand. Also do not over mix the batter or coat ingredients with the batter too much. The correct temperature to fry the tempura is around 340-360 degree F. To check the temperature of frying oil, drop a little bit of batter into the oil. If the batter comes up right away instead of sinking to the bottom of the pan, it's higher than 370 degrees F. If the batter goes halfway to the bottom and comes up, it's about 340-360 degrees F.

Tempura - What is the secret recipe?
Same here dear! I have exactly the same problem that I can't resolve till now. I did all that I could just like you did such as watching youtube videos on how to make perfect tempura but the results are always disappointing. Why oh why? I could not tell. All I know is that I've given up. I'd rather just go to a favorite restaurant if I want to eat tempura.

It is done perfectly as shown because they have probably been doing it for years. As they say, practice makes perfect, so I suggest that you keep on practicing, keep on doing the things you love and eventually you will be a master chef as well. Good luck and more power!

the popularity of cooking shows has made cooking very fashionable and accessible to all. cooking videos are also all over the internet. aside from local knowledge, i think practice and more of it will improve one's cooking skills. try to cook for others and see how they see your cooking. little appreciation from others help in motivating us to do better.

I know how you feel, before I used to watched cooking show too and follow all the instructions but the result of my dish was a disaster and dont even like the taste too. There a lot of good sites that you can get for the shrimp tempura and keep on practicing to make it perfect.
