Stuffed pork slab!

The people I petsit for had this in the freezer, and told me to help myself. Since in the past I have left similar meats. I am now cooking it on a sheet in the oven, and thinking what can I make on the side dish. May, use over the left over rice from last night. I did want chili but the can they had in the cupboard expired in 2009.

I've never made it but one of the shows I watch on the Food Network showed how one restaurant does it. I'm not sure if I could eat it, anyway you make it--cause it just doesn't sound or look appetizing to me personally is all. I wouldn't eat the expired chili though, that is gross. Were they the only choices you had there?
