That sounds really good I have some ground beef thawed out for tonight's dinner and I want to make something Mexican, I have already made the beans. Just don't know what I will end up making maybe some Spanish rice and I am going to make a chocolate cake too fro my husband well I guess I better get busy. Hope your dinner goes well. I kinda like to mix genres up when I cook. Tacos, I guess, are more along the lines of Mexican/Spanish cuisine, so I Americanize the rest of the plate. One of my favorite sides to have with tacos is a THICK French fry tossed in some great spices.
I'll take a big baking potato and slice it in thick stripes, soak the strips in salt water for an hour, and then let them barely simmer in olive oil on 300 degrees until they're just rubbery and tender. Then I'll crank the oil up to 350/375 and drop them back in there until they're super crispy. In the meantime, I like to mix up about a teaspoon of cumin, a teaspoon of dried ancho powder, a teaspoon each of garlic and onion powder, a teaspoon of black pepper, and 2 teaspoons of salt.
As soon as they're out of the oil, I'll hit 'em with this seasoning mix and toss everything around.
Sometimes I'll mix in some adobo sauce with ketchup and maybe a splash of vinegar to dip the fries in. I think the side goes great with something like a taco.
If I am doing beans and rice, I want something that's crunchy in there. I've only made it one time, but I'll take a jalapeno and julienning it into strips, toss it in some milk and then into some bread crumbs while wet, and I'll fry them up until crispy to have in the beans.
But tonight I'll probably just eat an egg sandwich because I don't feel like cooking.
