Making Christmas cookies with pumpkin.

I told you that I had saved the baked mashed pumpkin from Halloween. It was the first time I had one of such pumpkins in my hands and I had to learn that they should be baked instead of cooked as I do with our gourds. I found a cookie recipe and it turned out quite Christmasy, as taste goes. It had cinnamon and clove and had a texture similar to gingerbread men. So I changed my idea of making cupcakes and I`ll use all the pumpkin in cookies and let my grandson use frosting to make faces on them. Do you make changes in your cooking plans when something nice and unexpected comes along? Share.

I steam my pumpkin on the top of the stove, but you can cook it either way. I have never tried pumpkin cookies, but would love to have the recipe. I've been trying to find me some more cooking pumpkins so I can bake some more pumpkin pies for Christmas. The ones I cooked for Thanksgiving was delicious. I baked one and gave it to my sister in law and she bought one from the supermarket that was supposed to be home made(they use canned pumpkin, she said they tried the one she bought then tried mine and mine was better. Her store bought one wasn't finished. I can taste the pumpkin now. I wish I had bought more pumpkins and saved some for Christmas. Your grandson will have a blast making faces on them. I do make changes if something interesting comes along like your pumpkin cookies. cool idea.

That sounds wonderful and very festive. I would definitely make changes to my plans for dinner if something nice like that came up.

This is the fiest time I make something with a Halloween pumpkin. We have other kinds of gourds in my country.

I have never used pumpkin to make cookies, but I can say that Oatmeal Raisin cookies are delicious with pumpkin pie spice in them. If you want to try it, substitute nutmeg with the pumpkin pie spice. I tend to put in a little bit more than what the amount that it says for nutmeg as I love the taste.

I don`t think that it will be easy for me to get pumpkin spice. Besides, I only make some cookies for Christmas now. I prefer salty things and the kids don`t come too much with their several activities.

Mine had cinnamon and allspice. Fortunatly I had some allspice I brought from the US. WE cannot get it here. I think that allspice is a mixture that includes cloves.

i love cinnamon on anything and i love ginger flavored cookies. i still remember your pumpkin discussion and i'm convinced you're a whiz in the kitchen. you're so creative!

I think that cinnamon, nutmeg and ginger give cookies a Christmasy taste. The rest of the year, my grandchildren`s favorite cookies are chocolate chip. I love to cook and I love having people taste my dishes. I don`t bake too much, but when I do, I want to get a fan of my concoctions !

If you know how to make a simple white cake or easy sugar cookies, you can just add very strong coffee or ground bitter chocolate to the mixture. I would also add a bit of rum in those cases

i have a sweet tooth, but i've outgrown chocolate chip cookies. then i switched to peanut butter for a while when buying munchies. but now i like mocha and coffee flavors in cakes, cookies and ice cream. maybe it's time to come up with a cookbook of your simple gourmet inventions. your experimentations are always a winner.

Hi marguicha,Sure I do.Sometimes I just simply throw things together too.For instance I take several of what ever I have left over and mix it in eggs and make an omelet.Like mushrooms,chicken,ham,beef.....anything else that sounds good with eggs and cheese.

I make omelets with leftovers of almost anything. I love omelets. I have some chives in a container at home to throw in some in those occations.

I do often revise my use of something I have just cooked for the first time. For your pumpkin you might want to do a smoothie, I'm sure you can find a recipe on the Internet. I also love pumpkin soup.

You could also do pumpkin cheesecake. I also recently saw a new twist on pumpkin. Last weekend at Cold Stone Creamery, I saw they had pumpkin ice cream.

I Am always making changes and experiencing in cooking when I make pumpkin soup I usually use a bit of cinnamon in it I usually bake the pumpkin pieces with onion, garlic and cinnamon and then add all that to a home made chicken stock I also like my pumpkin scones with cinnamon...lovely any time.

I make soup with the gourds we have in my country they are less sweet and more dense, so they can be cooked in water and are still with lots of flavour.

I have made pumpkin cake/bread but never cookies. It does sound delicious and it s amazing what a little touch of cinnamon and nutmeg can do to add flavour when baking

That sounds yummy. I will have to try that one time. I like pumpkin alot. I have tried many variances in my one oatmeal cookie recipe. Sometimes they turn out good, other times so-so. I did not like the additional of strawberry applesauce this time which I tried again. I added peanut butter to it and it did not taste like peanut butter and jelly like I had wanted, LOL. Your grandson will have a blast making the faces on the cookies with the frosting. Awe.

I discovered that some spices give cookies a Christmasy taste. You might try cinnamon, clove and ground ginger. I liked the pumpkin taste. And I have had good results with mashed very ripe bananas.

That is quite new to me the pumpkin cookies. I also bake cookies but I never bake yet pumpkin cookies. I will make changes if unexpected comes along if there is really a need. However, all ingredients must be prepared oe else it would be difficult to make changes. have a nice day!

I had pumpkin baked and mashed from Hslloween. It was using up space at the freezer and I need all the room I can get to prepare the family`s diner on Christmas eve.
