For a long time I would fix scrambled eggs and toast on Saturday and pancakes on Sunday. Then a few months ago a local store had a coupon special on eggs and I bought a bunch. So to use them up a little faster I decided to have scrambled eggs on Sunday, also. Now I usually have two eggs when I scrambled them and when I made pancakes I would use one egg since I hate the just add water mixes. So I would use one more egg a week that way. What I learned is that the preparation, cooking, eating and clean up for the scrambled eggs takes a lot less time than it does for the pancakes. So now when I want some extra time on Sunday, I have scrambled eggs then also.

I love scrambled eggs and make them often. I don`t use ham or bacon though as it has too much fat. But I add minced chives sometimes. It gives them and extra something. YUMMY!!!
