Don't know what's for dinner?

Sometimes, no matter how hard I try, I just can't seem to think of an easy dinner. I don't like to go the fast food route, and it's usually on the weekend, like now, that everything in me just rebels against the idea of cooking. Whenever I feel that way I seem to turn towards the idea of an omelette and a salad. When I'm preparing it I always start to feel fine again. You can put anything you happen to have into an omelette, and it only takes a few minutes. The salad is much the same. I always have all kinds of good things for one. So that's what I do, but what I'm wondering is, what do YOU do when you have to magically produce a nice meal? What is your favorite go to thing?

i miss omelettes... don't ask, long story. i've not a go-to fer meals 'n jest fly by the seat 'f my britches. if'n the young'uns stop by, i cook meals. otherwise not coz the hubs'll not eat what i fix. so, these days i jest fix fer myself 'n eat all the lefto'ers. i used to live on salads, but can't do that coz'f all that darned fiber. sigh...i'm in a rut.

@VickiJW heartbreakin', that salad thingy - jest aint the same once ya pulverize 'em into odd colored liquids :( miss the crunch somethin' awful - but i'll survive.

@crazyhorseladycx wish I had a magic wand to help you with this. I truly can't imagine having to pulverize all my food. So sorry, dear friend. Dang, the only wand I have is a slightly used one, and I think I was scammed. Don't work!

@crazyhorseladycx - oh, that must be so hard for you. I can understand you saying you're in a rut. I wouldn't like to be on blender meals for too long. And it's sad you can't eat salads too.

An omelette is a good quick meal. I am Italian, when I need to produce a quick nice meal, my choice goes to pasta. If I have not pasta at home, it's easy to make noodles with a couple of eggs and all purpose flour, they are even better than dry pasta.

@VickiJW Pasta is easy to make and it does not take a lot of time. I also have homemade tomato sauce always ready in the freezer.

@ladyduck I hear you on this one! I love pasta too, and have Italian friends who do what you do. Her pasta is wonderful. She taught me how to roll it into different shapes, and yes, homemade is quick and delicious. I always have homemade tomato sauce in the freezer anyway.

@rosekitty - another fan of the quick cooking eggs! Yep, I don't worry about eating things just because it's the "right" time to do so. In fact I like rice pudding for breakfast, and my favorite breakfast is avocado on toast!

Usually, when I have to cook something quick I go for something with eggs, Scrambled eggs, omelette or some fried egg with sausages or steak.

We usually either have sandwiches or order pizza. It doesn't happen that often as my brother usually cooks every day.

when I cook I always try to make extra so I can put away a frozen homemade meal or two for those nights when I just need to pop it in the microwave and eat. Otherwise I love salad and the more things I can find to put in it the better

When it is the weekend and I need some food I sometimes think to go to a restaurant and sometimes even call in an order for Mexican food. Otherwise I will make some soup and have a green salad which is healthy for me.

Oh yes, an omelette is always a good standby. I must admit it's a daily headache deciding what to have, I'm sure if I was on my own I'd hardly bother cooking properly.

i tend to eat the same thing alot. once i find something i like and thats easy to make, i just repeat it lol right now its baked sweet potato fries. thats my usual weeknight dinner, when its just me at night and boyfriend is at work. when hes home, he really likes this eggplant parmesan quinoa bake, which isnt quick to make but i usually make it on sundays and have some throughout the week.

It is pretty easy to whip up a good chili, spaghetti, or we do burritos all are pretty cheap quick and easy.

I live alone and work a lot so unfortunately for me it is a lot of "heat and eat" stuff at my house. My microwave is one of my best friends, lol.
