Fried Potatoes and Onions, Yum!

In honor of my Me Day I decided that since I have a yen for some good old fried potatoes and onions that I would make up a batch of them for lunch. Even as we converse they are happy cooking on the stove in my favorite iron skillet. Well, maybe not happily, if I were cooking on the stove I might be feeling a little hot under the collar. Anyway, they are smelling quite good right now. I don't often make them because, well, they are fried but boy do I love them. I have been catching up on all of my notifications, I might get finished by tonight some time if I'm lucky. I can't wait to start reading the wonderful post by all the people hear. Maybe I will go straight to reading and commenting then go back to notifications. Anyway, my me day is going well. I am doing what I love best. How is your day going?

You made me hungry! I bet it was hot, it isn't really a pleasure to fry food in a hot summer day. The reward is still worth the effort.

oh, i love fried taters 'n onions with bell peppers :) can't partake'n 'em oft, the crohn's don't like such, lol. my day? outside 'f a sewin' disaster, 'tis been grand.

@HazySue seems i've managed to get my sewin' machine outta whack (not the needle this time, lol) 'n thus cannot do any free-motion quiltin'...which needs to be done.

I adore fried potatoes and onions! Sometimes I add in sliced carrots and bacon, fry til crispy, then add shredded cheese and sour cream. Oh my, high fat heaven. That's why I don't cook that very often, either.

@DianneN we have a conglomeration once in a while with potatoes, onions, green peppers, sausage, tomatoes, eggs, and cheese. It is delicious. I am so glad you are enjoying your day too.

Glad to hear that things are going well and that you are enjoying your much deserved Me Day. Oh I loved fired potatoes. The picture just makes me so hungry. I can't wait to get home from work so I can make some. I don't have them often either but when I do always enjoy them so much! Enjoy your time on here! Oh, you are making me so hungry! I love fried potatoes and onions. My brother makes them every once in a while and they are so good. We don't have them as much as we would like because sometimes fried foods do not agree with our tummies. I hope you enjoyed yours.

I love fried potatos. Here in India its a very common to fey potato with some salt ,onion and spices in pan and eat them with roti(wheat bread)I eat them in limit but as I have tendency to put on weight.Potatoes are yummy but they can make you fat if you eat them n regular basis. Above picture looks really yummy.Enjoy!1

@piya84 I don't eat them a lot because of the fact that they can help you put on weight. But, I do love that they have a high potassium level.

Peel potatoes and onion and slice both. Separate onion slices into rings. Melt enough butter to cover bottom of large skillet and layer potatoes on bottom. Salt and pepper to taste and add a layer of onion. Continue layering and dot top with butter. Cook over medium heat, covered, for approximately 20 minutes. Uncover and cook until crispy brown, turning only once.
