Dinner for Sept 12, 2016 (and Sept. 11)

Yesterday I tried to roast some chicken thighs with carrots, onions, and potatoes, and seasoned with thyme and rosemary... but I apparently had the temperature set too low, as it still needed quite a bit more time to cook when I checked it near dinnertime. Someone went out to pick up hamburgers for dinner instead, and I put the chicken and vegetables in the fridge.
On the plus side, that made tonight's dinner much easier! I have it simmering in the slow cooker right now.

I hope so! I've been thinking of it as "Sunday roast, take 2".
