A Home Cooked Meal

We have been eating things like frozen pizzas from our freezer that is not working, because those things thaw quickly and go bad fast.
I had thawed some ground beef right before the freezer started acting up, so we needed to get that used from the refrigerator. The weather has turned a little chilly so I made an old fashioned home made meal.
For supper tonight I made meat loaf. I chopped in plenty of garlic, onions, bell and hot peppers and celery. It was really good. Along with that we had cooked spinach, baked beans, and a microwaved potato.
It will warm up again soon, but meanwhile we packed our lunch boxes with meat loaf and potatoes for tomorrow but there is still enough meat loaf to eat one other day this week.
There are many versions of meatloaf and any way I make it, my husband loves it.

Hubby does not eat pasta, but he does eat just about anything else.

I havent made a meat loaf in forever, might have to do some more looking at recipes and make it again

Make it in muffin cups and freeze the meat muffins, then you will not get tired of it as you can thaw enough for a meal..

@GardenGerty It has sausage mince and pork mince. sausage mince is a very finely ground beef. It also has a thick coating of tomato sauce on top. that's about all i remember. It's very tasty and delicious hot or cold.

My son did not care for meat loaf. We have meatballs with nice sauces here from time to time.

@GardenGerty Meatballs are very good too, I made a tomato sauce with bell peppers, a bit of hot chili and garlic and finally I added chopped parsley.

I use lean ground meat, mix in whatever vegetables I have on hand. Usually we put in some oat meal for a binder and an egg or two. We bake at 350 F. until the temperature is of a safe range that says it is done. Meatloaf varies from day to day and person to person.

Meatloaves can be awesome. I even cut them fine for breakfast to make sandwichs with them.
