Fun after christmas meal ideas

I am looking for a fun and festive meal after Christmas recipe for experienced cooks. I've made tacos, nachos , and lasagna. All Mexican food I only have French fries and maybe some chicken left any ideas would help thank you. Some examples would be chicken pot pie, chicken and dumplings, chicken strips, popcorn chicken, orange chicken and grilled as well. All opinions are appreciated

If you can think Mexican then think Asian too. Noodles or rice. Also, remember that many leftovers can be turned into a hearty bowl of soup with some chicken broth.
