What's for dinner? May 1

What's going on your dinner table tonight? Do tell! I am baking seasoned thin chicken breasts. To go with them I am making jasmine rice, steamed cauliflower, and steamed green beans. I need to make lots of veggies to eat so I don't eat too much rice. I just love rice but I'm not supposed to eat a lot of it. I can have some tonight because I worked out today, but only like a palm-sized amount. I need those vegetables to help to fill me up. That's what's happening here. What are YOU having? I want to know!

I am a new vegetarian so I had a mayonnaise and cheese sandwich as I have very little groceries, so will go tomorrow with my Uncle Bill

Be careful with being vegetarian. Make sure you are getting enough protein and you are eating plenty of vegetables. You can't be a healthy vegetarian eating only pasta, bread, pancakes, and cheese like my coworker. Stock up on beans, frozen vegetables (NOT canned), and buy healthy grains like quinoa which are packed with protein. They will be reasonably priced and last a long time which will help to get you through the month.

@NJChicaa Thank you so much! I didn't have fruits and vegetables today as I didn't have any in my refrigerator I am going grocery shopping at 11:30 am with my Uncle Bill, and I am going to try and be a healthy vegetarian. I just have to find a quinoa as I have a bag in my pantry

@Marty1 It will definitely be an adjustment. I don't know how often you get to the store, but if it isn't often I'd focus more on frozen green veggies, eggs, yogurt, beans, quinoa, rice, pasta, tomato sauce, etc. Things that will last. Go for some fruits, fresh greens, avocado, as well if you can fit it into the budget.

The special dish for the Dinner was Okra Curry with jasmine rice. Really good taste.I enjoyed it.

I hve never had jasmine rice but really want to try it at some point haha We are having some pork chops and a salad. Something simple and quick because it is a tad warm.

Jasmine rice is just like white rice but it has a bit more of a flavor to it. . . I don't know how to describe it. I'd say floral but I don't want to scare you away from it because it doesn't taste like flowers. I used to buy basmati rice a lot but I didn't like how it came in bags I couldn't easily re-close, so somehow I wound up trying jasmine rice and I've stuck with that.

That sounds good. I had a chicken steakumm sandwich with tater tots and leftover creamed corn. I had strawberry milk to drink.

I didn't know they did chicken steakums. I love tater tots and creamed corn and haven't bought them in a long time since I'm trying to be good with my diet.

@NJChicaa I think they did in the past. I've been searching for them for a long time and found them at my local Acme store last month, even if it wasn't on sale. I remember my mother ate them way back when. Good for you for sticking to your diet.

what type of seasoning? I like all veggies and I am not supposed to have rice either, runs up my blood sugar. I am not hungry so I wont eat, maybe a banana with my nighttime meds.
