Stuffed Peppers

My husband finally got his stuffed peppers. I was going to make them on Thursday but a couple of the peppers were still a little small. An extra couple of days didn’t make a big difference but I wanted to fill the kettle. He stuffed himself. As usual, my husband claimed that they were the best stuffed peppers he ever had. It’s fun to cook when your efforts are truly appreciated. Do you have a special dish that your spouse goes crazy over? I like stuffed peppers but I can think of a hundred other dishes that I like better. What is your favorite dish and how often do you make it?

My husband loves my cabbage rolls. I usually make them in the fall when the cabbage is in season. I don't like cabbage, at all, so I have to stick to my recipe and not go by taste. Funny what I dislike is what he loves. He also loves my red cabbage, that is a tricky one to get just right, tart yet sweet-again another recipe that I have to follow to the letter. My favorite dish has to be lasagna, we both like it, but I only make it a few times a year during the winter months.

I love lasagna but I don't make it often. Both my husband and I love cabbage rolls, but they are a lot of work. I found an old recipe of my grandmother's that uses chopped cabbage. It tastes the same but is not as much work. My husband is just as happy with that.

The stuffing is a mixture of rice, ground meat, and tomato sauce. I usually use a combination of ground pork and ground beef.

@hereandthere I used to bake them but my husband prefers them cooked in the sauce. Once the peppers are gone, he used the remaining sauce on pasta.

@BettyB ok. We start by frying our cubed chicken and fresh mushroom in a wok. After some minutes we add sweetcorn, carrots, green beans in the wok and let it cook for some minutes. Once this is ready we add our noodles in the wok and mix it well with the other ingredients. At this point we also add soy sauce and oyster sauce.

@BettyB This is something that I also like a lot. I have tried to grow eggplants in the garden, but it takes forever to have very small eggplants. I buy them.

We both love Eggplant Parmigiana. I have an eggplant that has two little eggplants on. They're only the size of walnuts right now, but in a few weeks we'll be eating eggplant parmigiana. I can't wait!

@LadyDuck I'll buy them when the mood strikes but its fun to grow them as well. We have one on the plant right now. It's about the size of an orange. I figure it will take another week or two to get big enough to pick.

My new favorite is one I first had at a women's brunch for the church group. It's called an Egg Bake. It's super easy to make - eggs, cheese, shredded potatoes, and then you can add other things as well, the last time I had it at someone's home, they added spinach to it. I put it in a casserole dish and bake in the oven at 350 for about half an hour. Very good. I've had it a couple times now.

@just4him I should make it here at home every now and then, but I usually don't eat a hot breakfast in the summer time. I might make it for dinner one night.

I love egg and potato casseroles. I don't make it at home often but someone usually brings one version or another to our Women's Prayer Breakfast every month.

@HazySue It sounds delicious. We're overrun with tomatoes so I've been eating salad for dinner every night lately.

When I used to bake them I would partially cook them first, but now that I cook them in the sauce on the stovetop, no. It's not necessary.

Your peppers look fantastic, and I'm glad your hubby loved them! My husband goes crazy over any food! A fussy eater he isn't. I make a fabulous beef brisket once a year.

They are good. I wish I could eat them but peppers and I don't get along anymore. I enjoyed the aroma while they were cooking but I resisted temptation. Heartburn hurts.

My husband would be happy eating them every week, but he'll have to wait until the little peppers in my garden are bigger. I refuse to buy peppers. They're outrageously expensive.

I love stuffed peppers. I have not had them in a long time and hadn't even thought about them until I saw this post. I might have to make some soon. I don't believe I have anything that he goes crazy over but I do love his baked mac & cheese.

My husband loves a good steak and my homemade mac and cheese is a favorite of his. In the winter I make it weekly.
