Keeping it simple

It is too hot to prepare elaborate meals right now. I am finding that it is best to keep it simple. Last night I fixed an egg bake casserole--it had eggs, of course, and two kinds of cheese. Bacon bits, and a few tomatoes and some spinach along with seasonings rounded it off. We had watermelon with it, and then I had cake in the freezer, so there was a good dessert. Tonight we will have a green salad, topped with shrimp. More watermelon or other fruit, more cake, no heat to the kitchen as I will season and quickly saute the shrimp. Hubby has been wanting shrimp for some time, so this is what we will have in various forms this weekend. A meal like this is not much harder than a sandwich, but it is still interesting and good.

Last night I sauteed scallops, the house still smells scallop-ish. We cook the same no matter the time of year. My kitchen doesn't heat up when I cook. We eat more veggies in summer but not raw.

It's hot here too and for dinner I am going to prepare avocado with shrimps followed by cheese cake.

They sound nice meals... I love salads ..especially at this time of year, the less cooking we have to do the better...

We have more shrimp, it will go in a different salad tomorrow. Tonight we had grilled cheese sandwiches, tossed salad and cake.

@GardenGerty It all sounds good. I try to have more salads in the summer when it is so hot. I also think sandwiches or wraps are good during the summer. I made a roast yesterday so I could slice it and use it for sandwiches.

i find that taking the time to eat a salad helps me feel full on less food.

We were eating so much during the day when I would go into work with hubby that we would do things like a milk shake for supper.

Shrimp sounds so good Heather. It is nice for the hot weather. I too do not cook a lot when it is hot.

shrimps always sounds good to me. whether in tom yum, or in 'sinigang', or just plain butter and garlic

Mine is high today, but I know why. It all started with a Mennonite breakfast buffet. I want to try that "cloud bread" recipe sometime. I know lots of people will make wraps using lettuce leaves instead of bread or tortillas.

@andriaperry I have been taking some herbs that seem to help me. Everyone is different though.
