Supper last night

The cupboard really was bare. I had some potatoes, an onion, garlic and a tin of tomatoes and not a lot else. Then I remembered reading somewhere about "Baked Potato Soup." I really wish I had this idea when my kids were young as I think it would go down well at the tea table. It cost me next to nothing as this was a store cupboard meal. It wasn't hard to microwave the potatoes to bake them, and I sauted the onion, garlic and a bit of carrot I found. Then I put everything together with water and milk. More milk than water. I also added a tin of chopped tomatoes but I don't think you have to. To my delight, I discovered I had paprika, black pepper, and mixed herbs to season this with. The added bonus is you mash the potato in the soup rather than putting it through a blender. The whole thing needed salt, but it was really tasty and I have lunch ready for today. So that was a good meal for when nothing is in the cupboard much at all and I think I would make it if friends came round as it would be tasty with French Bread. I am tempted to freeze some. To top it off as I had a cooking apple I just mixed oats and butter with honey and a bit of sugar and sliced the apples into the mixture. I made a sort of toffee apple pudding and that was rather nice too. I quite often do that to satisy a sweet tooth on the basis that oats are good for your mood. Now I am wondering, seeing as I found cucumber, lettuce and tomato I forgot in the fridge if you could make lettuce soup with it. I know I read about that somewhere......
