Those Crackers That I Told You About

I think that I told you a couple of weeks ago about baking my own crackers. I've been doing it a few weeks now and I think that I have mastered it. The ingredient list is pretty much the same as bread would be... flour, water, salt, and oil but the trick is to roll them out paper thin and I'm mean paper thin and then bake them for 5 minutes. There is one draw back that I have noticed however. I tend to leave them in a hot oven that has been turned off to crisp them off. Darling daughter has noticed and when I went to put them into a container, half of them were gone!! When I asked if she had put some of them away, she just laughed and said that they were really good! I think that I will wait until they are all gone this time before I roll out another batch. The dough keeps really well, wrapped in plastic wrap in the fridge!!

Congratulations, I use the same trick when I want something crispy, turn off the oven and leave in the oven until cold.
