Pasta Contemplation

October 19, 2017 5:12pm CST
I was having some DEEP thoughts today about pasta. Ok, so how deep of thoughts can a person actually have about pasta? Well, it began when I decided to have linguini for dinner. And I realized that I hadn't cooked linguini in quite some time. Linguini has always been my favorite shape of pasta. After eating our delicious dinner, I began my contemplation. Why is it that the shapes of the pasta can make such a difference? Especially when I was comparing linguini to spaghetti. They are so similar. Both are long and fairly thin. But the linguini just tastes better to me! Then I was thinking of oriechette, Parpadelle, butterfly noodles, penne, ziti, rigatoni, and angel hair. I prefer penne to rigatoni, but WHY? They are both tubes. I was remembering how my father in law absolutely did not like angel hair, but he liked pasta.... How could you NOT like one pasta, but like another? See my deep thoughts? It was a very contemplative 3 minutes....

If the linguini are "real" linguini there are eggs in the pasta dough, spaghetti are only made with water and durum wheat. I see no difference from penne and rigatoni, penne are smaller and they cook quicker. Orecchiette are good if made fresh at home, the taste with the dried orecchiette you buy cannot be compared. I hate Angel hair, but (being Italian) I like many different kind of pasta.

@jillybean1222 The paternal grandmother of my husband was from Puglia, this is why he loves the orecchiette homemade. I am a northern, I was born and grew in Milano.

I'm a fan of all pastas, the "real" the less real... ha ha. so many varieties. i've always said i'm Italian at heart. I worked, briefly, for a wonderful Italian restaurant owned by an Italian family that loved food, loved their heritage. I learned a lot about cooking authentic Italian food from them.... They were from Puglia, so a lot from that region. yummy

Shells for tuna casserole! Elbow for goulosh, Angel hair for spaghetti, Linguini for Chinese... yes each dish has its own pasta. I love pasta, can you tell?

@jillybean1222 Well contemplate this. In my supermarket there is a helpful sign that points to way to find spaghetti AND pasta. Now I'm going to go and cook up a sauce with anchovies in it to go with pasta.

It really IS funny, now that you mention it. Linguine is my favorite pasta, but I hate Angel hair pasta. Really weird. By the way, the picture is adorable!

I have wondered about all those pasta shapes as well and what is best for what dish. Anne seems to know an i like it all. We get some great lemon papperdelle pasta at TJ's. Great pic!
