Today is Finally Here

I've been waiting three months for today. I've worked hard to get my home cleaned and shiny. Everything is done. And I mean everything.
I want to start cooking, but it's still too early. Only 7 AM and guests arrive by 10. I'm really hoping it will be a good turnout and not end up being like my one and only book signing, when it snowed and nobody showed except my brother and sister-in-law to support me.
It snowed last night and they say the roads are slippery. The advisory ended an hour ago and the plows have been out all night. Though traffic does look good out there. The plows did a good job clearing the street.
Okay, I've cleared out my notifications and I'm going to start peeling potatoes for the egg bake.
I have the dishwasher going, washing all the cups so they aren't dusty from non use.
Have a wonderful day, and I'll be back later, but I'll no doubt need a nap first. I've been awake since shortly after 2 AM. Yes, I'm excited for this day. It's my first-ever entertaining and I'm looking forward to it so much it feels like Christmas.

Since this is my own recipe and not from a cookbook, I can tell you what I did for it. Since I was expecting a larger crowd than came, I made up a dozen eggs, and two large potatoes quartered. I put that into my Ninja to get it well mixed and blended. I cooked up a full package of uncured bacon. I did not put the bacon in the Ninja, but I did crumble it, and stirred it into the mixture once I put it in my baking pan. To the eggs and potatoes in the Ninja I added about a cup or less of cashew milk. I pulsed my Ninja just a might too long as the potatoes were completely pureed, I would have liked it to be a little firmer with the potatoes, however, it still turned out perfect. I added cinnamon and nutmeg to the egg batter, just as I would do for French toast, then put it in the oven for about an hour. When I make less than I did, it's usually done in about half to three quarters of an hour at 350 F degrees oven.
Because I'm on a Whole30 diet I used cashew milk, versus real milk, and uncured bacon. You really can't tell the difference. I also did not use any sugar or honey as I normally would when making French toast, and that too you couldn't tell there wasn't any. It turned out really good.
