What's going on your dinner table tonight? Do tell! I'm cooking a ham steak in my cast iron skillet. I get it good and hot to get some color on the ham. To go with it I am having a baked sweet potato and some roasted cauliflower. Nothing fancy tonight but it will be good and I'll enjoy the leftovers for lunch at work tomorrow. That's what's happening here. What are YOU having? I want to know!

Ha! I just made a post about this myself. I'm making a chicken hotdish for dinner in my pretty casserole dish. (Not my photo, but this is exactly what mine looks like.)

@NJChicaa I got it at Target last year. It was definitely an impulse buy, but I haven't regretted it at all. It's slightly bigger than a 9x13, so it's perfect.

I haven't made Mexican for dinner in a long time. I had Mexican scrambled eggs for breakfast this morning though so I did get my daily dose of cilantro.

That sounds delciious. Dinner last night was a Surf and Turf burger. Basically, it is a fish fillet and a burger patty in sweet buns!

That sounds so good. I bought a ham steak last week and will use the marrow from it to make my split pea soup in a crockpot in two weeks. I had a cheese quesadilla with salad, hot tea and water to drink for dinner.

You keep enjoying those summer sides (cucumber salad, cole slaw, etc.) all throughout the year!

@kobesbuddy We like them too but I only do them in the warmer months. In the cold months we stick to baked/mashed potatoes, rice, and sauteed or steamed green vegetables.
