The Egg Bhurji

In India egg bhurji got countless recipes. This is the easiest to make and can be innovate time to time. In India we call it and (egg) bhurji. It is equally edible and famous in the rest of the Asia as well. My way of making egg bhurji is - take 2 eggs, remove yolk, that's the way I like. Whisk the eggs for 5 minutes. Now add oil in the pan. Add finely chopped onion. Add green chilly, saute it till the onion gets light reddish. Add turmeric powder, red chilly powder and mix it well. Put the whisked eggs in the pan. Stir this mixture until small crumbs are formed. Add salt to taste. Continue stirring them for about 2 to 3 mins more. Generally eggs in this recipe cook fast. Finally the egg Bhurji is ready. Garnish it with coriander leaves. I generally eat this with roti (Indian bread) that's my way of making it. Guys Do you have any recipe for eggs?

The recipes sounds delicious, the pic is also tempting, I also make egg burji at night to have with bread or chapati, when I have no curry at home. I like to add coriander leaves in my burji.

It is one my most favorite dishes. We do not remove yolk, while cooking it. What makes you remove yolk?

that sounds good except for any hot tasting stuff I can't handle. do you save the egg yellows? for some other dish? we have eggs in so many ways here its hard to believe. tons of recipes for them

Eggs here are not of good quality. I stopped eating them long time ago. But that does look delicious
