Here is my cast iron Dutch oven, full of potato soup.
You may remember I bought two bags of potatoes and said I would need to eat them a lot for a while. That is what I am doing.
The soup has nice chunks of ham, as well. We cooked a ham just before Christmas.
You possibly see the parsley floating on top.
I am going to serve some to hubby and I, and let the rest cool to have on another day.
This is perfect for the cold weather.

Soup comes in so many varieties. I like chicken tortilla soup. It seems we shall be eating soup of one kind or another for several days.

Yes, it is. I have enough we can have it for two more meals. I like soup this time of year. I think I will make a salad with it.

It is one that stays well with you. Not sure you would want hot soup in your hot weather, though.

@JudyEv I have not ever made cold soup. I should in the summer though as that is when we have so much fresh produce.

@GardenGerty No, that's true although I do like soup. Very occasionally I make cold soup in summer - perhaps cucumber or tomato soup.

Do you find it freezes well. I always heard potatoes get yucky when frozen. Of course that does not make sense cause french fries and hash browns come frozen.
