Teriyaki porcupine meatballs for dinner

Tonight's dinner was born out of creative desperation -- "what on earth do I make with this ground beef that's not the same four or five things I make all the time?" I thought of meatballs, then thought of porcupines, but I'm out of both tomato soup and tomato sauce (and didn't want to make tomato sauce from scratch out of tomato paste, as I already did that two nights ago when I made sloppy joes). I remembered that I had an unopened bottle of teriyaki sauce in the pantry, and decided to use that as my seasoning liquid instead of tomato sauce/tomato soup. I have no idea how this will turn out, but they're currently simmering on the stove. We'll have those with some pineapple (from the freezer and currently thawing in a bowl) and green beans. Photo is not mine, but from a cooking blog

You can't go wrong with teriyaki, it makes everything taste good. I wish I had your imagination with food, my husband would be so much happier lol

interesting combination - teriyaki and pineapple. meatballs and porcupines - but no spikes!

They actually do have spikes! The meatballs are called porcupines because they are made with a mixture of rice and meat, and the rice gives them a spiky appearance. Here's a different picture of some.

I have never eaten porcupine. I would hate to skin them. What's that? Oh, never mind.

Truthfully, I've never eaten porcupine meat either. I wonder if it's gamey like groundhog?

These could be easily made with ground chicken instead of beef.

@HazySue I guess it's a good thing that I post about food, since it gives me these references later.

I think I like them best with the tomato sauce, but this was a successful experiment that we'll do again.

It's not porcupine, it's beef. They're called porcupine meatballs because the rice makes it look spiky.

Teriyake sauce is by itself delicious already. How much more putting meatballs and some pineapple. I know, it was a very nice dinner dish that you had many months ago.

Did they turn out good? Because they sound really good. We had fried porkchops. But the other half crushed up Funyuns as the crust. So good. We also had cheese sticks and fully loaded potato logs. After work yesterday I just wanted fried foods. Tonight is Chinese food night.
