The brisket was delicious!

My husband took it out of the smoker at noon so it smoked/cooked for 16 hours. Then we rested it in a small cooler for 6 hours before slicing it. It was really outstanding. I trimmed some of the fat cap off of it as it didn't melt away as much as I had expected it to. No one wants to eat that.
We have a TON of meat! I bought egg roll wrappers at the store today. I'm going to experiment with the shredded bits to make mini brisket egg rolls tomorrow. We'll have some of the brisket this week on salads for lunch and I'll freeze some of it for future dinners.
Such an easy and delicious way to cook meat. Yum!
