Made dozens of enchiladas today

My daughter wanted some so like a good mom I mad them for her. I hope she freezes some to last awhile.
A little work doing these but I don’t mind had everything on hand. Now I need to figure out what to make for our dinner.
I think we will have soup and sandwich.

What a nice gesture. I hope she does freeze the majority of them, they will make a good meal for when she is tired from work and doesn't want to cook.

@CookieMonster46 I've never made my own. Taquitos? Sure. Carnitas? Yeah. Tortilla Soup? Definitely. Just never tried enchiladas. Is it easy to make?

@ScribbledAdNauseum tortilla soup I love,I think the rolling of them takes the longest. If you make taquitos you probably would be fast at it.

They won’t last long with her she eats about thre or four at a time and might freeze some. She really does love them.
She has always been one to eat big and maintain her shape, so I guess why not.

It is in a bowl on the side she can control that. But they were made with sauce, we don t put it on heavy.
