What's for dinner? June 26

What's going on the dinner table tonight? I want to know!
I am making Chicken Enchiladas with Salsa Verde and Smoked Ancho and Pasilla Sauce from the Margaritaville cookbook. This recipe is a doozy as you actually have to make 3 other recipes before you can get to this main one. You have to make Chicken Tinga, Smoked Ancho and Pasilla Sauce, and Salsa Verde, THEN you can start following the directions for this. . . and you still have to make charred corn before you can start assembling the enchiladas. 
I will probably make Rick Bayless' Gulf Coast Style White Rice to go with these and maybe some steamed green beans topped with salsa on the side as our veggie.

Today is Tuesday and mi friends will come I will have bread and butter, cheese and ham. And jam too.

@NJChicaa All Tuesdays are like this. My friends don´t have dinner and they always visit on Tuesdays. So I do what they like.

Sounds yummy but I can't eat most of that because of the Vitamin K content. I have to watch Vitamin K now that i'm on Coumadin. I had a pepperoni pizza hot pocket and homemade rice krispie treats for dessert.

@NJChicaa yeah it's hard adjusting to that. I have to look up things i eat to make sure it's low in vitamin k.

Hmm, I don`t know but it wont be complicated. I have been working all afternoon on the new home based business, accounting today and a little clear and free soap making.

We're making breakfast for dinner. I have 2 loaves of stale bread to use up, so we're having French toast. I'm also making medium soft cooked eggs in the Instant Pot, plus I may make some Normandy vegetables and cheese sauce as a side dish.

Wow, I think if I had to cook 3 recipes before making enchiladas, I think I would go out to dinner. Client cooked pork chops, so that was it.
