On the table tonight

The other day, in a restaurant, I had a grilled chicken salad. It was good, but the chicken was dry. I decided to do a little better. Tonight we had pan seared salmon on a salad. The base was baby romaine leaves. I then put a ring of thinly sliced tomatoes around the outside of the dish. Across the top rings of red onion, and strips of yellow peppers. Blue cheese was next, then the salmon that I had cooked the other day and put in the fridge. We used a strawberry balsamic vinaigrette. It was a delicious summer salad meal.

This is a very good summer salad, I often serve salmon in summer.

@LadyDuck Hubby likes it cooked with lemons sliced on it, or with apples sliced on it. I do not mind eating it hot in summer as well, because it does not take long to cook.

@just4him That is right, you do not do dairy, so no cheese of any kind. You could add chunks of avocado for that nice creaminess.

I am not familiar with the word "Vibgyor" but it was a rainbow of a salad and so healthy.

I'll have to look for that vinaigrette. Our cherry tomatoes have just started turning ripe. Sure tasty!

I bet that was a tasty meal huh. I love the Raspberry balsamic vinaigrette, its delicious so I bet strawberry is too.

No, sad to say, I did not. I have a lot of salad dressings on hand from some sales and I want to get them used up then I will make my own.

@GardenGerty I read a blog some years ago where someone wrote about her raspberry balsamic vinaigrette. I was surprised to see that her secret ingredient was a spoonful of raspberry preserves whisked into the dressing. It would be so easy to make it strawberry vinaigrette, or apricot vinaigrette, or cranberry vinaigrette (using cranberry sauce)...

Blue cheese is actually a white cheese that gets its flavor from a blue gray mold.

I do not know that I would like that in this heat. I am wanting to finish assembling mine, but put it in the freezer to have on a cooler day.
