I decided to have Caesar salad (without croutons alas) for lunch today. I had the romaine lettuce which needed to be used up and all of the ingredients to make the homemade dressing in Julia Turshen's cookbook, Small Victories.
This is an excellent recipe--easy to make in a blender or food processor (I used my mini food processor) and it doesn't require raw egg like so many recipes do. Seriously, anyone can make this. You just dump the ingredients into the food processor and turn it on. That's it! The ingredients are all pantry/fridge staples for me but some people may not have anchovies or Parmesan cheese on hand.
If you want to try making your own Caesar dressing at home, I highly recommend this recipe.

Anchovies aren’t bad in a recipe like this bc they get blended up and you don’t know they are there. They give the dressing a vital part of the flavor. They are in Worcestershire sauce too I believe. I wouldn’t want to eat them whole or in pizza , but they are great as an ingredient in things.

All Hail Caesar! One diner said to the other diner having a Caesar salad: Et tu Brute?
