Caesar salad for lunch

I decided to have Caesar salad (without croutons alas) for lunch today. I had the romaine lettuce which needed to be used up and all of the ingredients to make the homemade dressing in Julia Turshen's cookbook, Small Victories. This is an excellent recipe--easy to make in a blender or food processor (I used my mini food processor) and it doesn't require raw egg like so many recipes do. Seriously, anyone can make this. You just dump the ingredients into the food processor and turn it on. That's it! The ingredients are all pantry/fridge staples for me but some people may not have anchovies or Parmesan cheese on hand. If you want to try making your own Caesar dressing at home, I highly recommend this recipe.

Sounds like a good salad for a hot day. I don't usually have anchovies lying around. Never had them, don't plan on it. It's good you had a recipe to make the salad dressing.

@just4him Yeah. Definitely don't discount trying them in a recipe just because of the fact that they are "anchovies". They add great flavor to things.

Anchovies aren’t bad in a recipe like this bc they get blended up and you don’t know they are there. They give the dressing a vital part of the flavor. They are in Worcestershire sauce too I believe. I wouldn’t want to eat them whole or in pizza , but they are great as an ingredient in things.
