That is exactly what is happening to me now. At the moment I have a craving for Russian salad but I do not have the necessary ingredients to make it.
Russian salad allows many variations. I have opted for curds instead of Mayonnaise. The taste has always been great. The boiled sliced potatoes, boiled sliced eggs and a whole lot of boiled vegetables with a rich mustard paste is what I thoroughly enjoy.
Here is a recipe with chicken. As I said anything goes.

I've never made a salad. The supermarket here doesn't sell mayonnaise.

You can use yoghurt (curds) instead which is healthier than mayonnaise

Using a hand blender, you end up with a cup full of creamy, perfectly emulsified, real-deal, better-than-anything-you-can-buy mayonnaise.
