Ratatouille For Dinner

As I was doing my morning picture watching I came up not only with an idea for a post but also a great idea for dinner. I ran well, walked to my fridge and checked out the veggies inside and decided that I could make a wonderful Ratatouille for dinner. I had all the ingredients and then some. So I killed two birds with one stone. How nice. I haven't had Ratatouille for some time and am looking forward to dinner now. My day today will be filled with reading, writing, and a little bit of resting and watching TV. What does you day look like. Hope it is a wonderful day for all of you.

I often made Ratatouille when I lived in France and I wonder why I do not prepare it anymore. My husband likes it.

Oooh I love Ratatouille, it is the best thing to have before all the vegetables go bad. I need to suggest this to my mom soon. I'm going to be working online today and I hope to get some drawing done as well depending on how I feel.

Today (Friday) so far it is sunny and hot here. I hope it stays sunny long enough for the hubby to bbq some pork steaks for dinner.

It's a mixture of zucchini, onion, yellow squash, green peppers, sometimes eggplant. You sauté it in butter flavored oil spray. It's hearty blend of all the veggies.
