Curd Dosa - a memory

Cooking is one of my passions provided ofcourse I get help to do the tedious jobs. I have collected recipes from wherever I could and that included friends This friend gave me the recipe for curd dosa. Sadly she has now lost her memory and we are hardly in touch with each other. She is a vegetarian but to make things easy I always add an egg and we have had discussions on this issue - memories just flash back. We had this for breakfast today.

We do not make naan often. You need a special naan maker (tandoor) for that. We had that once but we gave it away.

They look like French crepes, but I think you use rice flour. It is a shame when the age "steal" our memory and we can remember nothing. I have many recipes passed to me by my grandmothers and my mother.

This is done with maida or white flour is what you cal it. I have two such friends who have lost their memory

@LadyDuck These kind of dosas need a rubbery effect and maida assures that. Losing memory is when people do not sharpen their brain.

I have seen the word dosa many times. It looks like a pancake of some kind. Is it sweet or savoury? Sad that your friend appears to have dementia. This is a horrible disease.

@allknowing I have found the one I would not mind eating Eylanchi is a sweet pancake from Kerala. I like the sound of the coconut ones. I also love banana so I am sure I would be able to get those. We are going to Tamil Nadu so I hope they make these there!

When an egg is added it is easier to remove these dosas from the pan.

We are not supposed to post recipes here. May be I can just talk of ingredients - egg, minced coriander leaves, minced green chilli, a bit of coconut, sugar, salt and yes curds but no water. The consistency should not be very thick. Fry on both sides.
