Making low-carb stuffed peppers

I got the idea from our gym's detox diet facebook group. I was going to use frozen riced cauliflower like the person did but yesterday I bought fresh riced mixed vegetables from Trader Joe's so I decided to use one bag of that instead of the traditional rice in the ground beef mixture instead. The vegetable mix is riced broccoli, cauliflower, yellow onion, red onion, and carrots. I cooked the ground beef with some finely minced garlic, Penzey's Mural of Flavor seasoning, a can of fire-roasted diced tomatoes, and a can of tomato sauce. I don't normally make stuffed peppers so I have no idea what I'm doing. I'm just winging it here. Hopefully they will be edible.

I've never made stuffed peppers either but it's something I've been wanting to do. I like your idea of using the riced vegetables instead, I might have to try that later this week.

They will turn out delicious, just like every other recipe you follow:) I'm not the best cook around, but I do have a few old stand-by recipes that I make quite often.
