It's time for matzah ball soup

Right now, it's Passover. I love to eat matzah ball soup during this Jewish holiday and always make it. When I make matzah ball soup, what I do first is make chicken bouillon by boiling a whole chicken with sea salt, large onion, large carrot, and celery. Then I make matzah balls out of the mix they sell and cook those. When it's time to eat I combine the chicken bouillon with matzah balls and add the veggies from the chicken bouillon to it along with fresh dill. It tastes delicious. I even throw in some of that chicken into the soup. When making the chicken bouillon this time, I used a large parsnip instead of celery. Celery was $3.99 at the store, which I think is crazy, especially since it's not even organic. I did not want to pay that much so decided to swap it with parsnip instead. I tried it last time (when celery was also that expensive) and liked it. Parsnip has a bit of sweetness to it and it adds to the flavor of the chicken bouillon. Do you like matzah ball soup and did you ever make it?

I've never had a parsnip either until last time. I like it. I might start using it in other dishes or making puree out of it.
