Roasted Potatoes for Dinner

Potatoes are a favorite. So many ways to cook them. Tonight I cubed a few red potatoes and simmered them in a pan with a little olive oil, salt, pepper and parsley. I really like the little red potatoes. They are good just boiled with butter. Had some toast on the side and called it dinner. Not a lot but I was not very hungry. Have a great evening everyone. Any dinner plans out there I wonder?

Dinner is said and done. Those look good and I'd probably eat it. Red potatoes are my least favorite potato, I don't know why.

@CarolDM Russet or white potatoes were what I grew up on. I can't recall ever having red potatoes until I was out on my own.

I was thinking that you roasted those red potatoes but they're boiled. What's the difference between rossted and boiled?

@CarolDM Well. Not to be a party pooper. But roasted is not done on the stovetop at all. Roasted is bathing the potatoes in herbs, spices, and some oil and then putting them into a roasting pan or a cookie sheet and cooking them in the oven. What you made are more akin to FRIED potatoes.

Boiled is using water, roasted is sort of simmered and stirred in a pan of olive oil or butter.

@CarolDM Sorry I am no cook. What I know about roasting here is the food is cooked over a fire.

For dinner, I had 2 fish fillets from the air fryer. I might finish some tuna salad that was leftover in the fridge later since dinner was rather early. A rather fishy day.

Potato! I love potatoes. My favorite dish is fried potatoes, lettuce and chicken. For me, potatoes alone are enough, fried without other side dishes. When I fry potatoes for myself, it's always a double serving.

I love baked or roasted potatoes that i apply butter and sprinkle with cheese. It is a nice snack food for me.

We're having pickled pork for dinner as we'll have guests. The pickled pork will give us cold leftovers for lunch the next day.

I like Maris Piper for roasting, they are on the fluffy side. I also like to roast sweet potatoes and butternut squash with the spuds. A good combo, me thinks

One of my favorites! I add fresh garlic and rosemary to mine. Always a hit. We had omelettes with a slice of toast. My husband helped by chopping the onion and pepper and cleaning up. I wasn’t very hungry after my leftover Publix fried chicken for lunch!

It looks like sweet potatoes. In the Philippines, I love boiled sweet potatoes we call "camote" with grated coconut for breakfast or snack but it is only common in provinces not in big cities here.
