Tomato Soup
Ingredients
4 tomatoes\cooked, peeled and finely chopped
1 cup chicken stock
1 onion\cooked, minced
2 whole cloves
1 tsp. basil, or 1 Tbs. fresh, chopped
1/4 tsp. baking soda
1-1/2 Tbsps. unsalted butter
1-1/2 Tbsps. all purpose flour
1-1/2 tsps. sugar
2 cups evaporated skim milk, hot
Instructions
Combine first 5 ingredients in a heavy non-reactive saucepan over low heat. Cover and simmer 30 minutes. Remove from heat. Strain mixture through a fine sieve. Stir in baking soda, and salt and pepper to taste. Using a wooden spoon, combine butter and flour in a small bowl. Add flour paste and sugar to tomato mixture. Whisk over medium heat until mixture thickens slightly. Remove tomato mixture from heat. Stir hot evaporated milk very slowly into tomato mixture so mixture will not curdle. Return tomato soup to medium low heat until very hot but not boiling.

Thanks for the recipe. I love tomato soup and am going to try this. My sister-in-law makes it with rice to thicken it (she puts it through the blender so that it is smooth). This one sounds much easier.

I love tomato soup! I will take whatever toms I have ripe in the garden, as many as possible, add oil and a bit of water to the bottom of a stock pan, and bring them to a boil. Once the have stewed and softened, I let them cool, and then run them though the food processor and strain off all the skins and seeds. In the meantime, I chop and sautee an onion and garlic cloves to taste in olive oil, then mix all together and simmer gently. Delicious!

I don't like tomato soup. I like tomatos. I like tomato sauce. Something about tomato soup grosses me out. My uncle used to make us eat it as punishment if we didn't clean the horses stalls or bathe them. Jerk! Yuck! Those horses stalls were spotless!

i only eat heinz big red tomoato soup and i add a tin of milk not water to it.....thats the best way, in my view, to have it

I usually make it from the Campbell's can! I use milk instead of water, which makes it a bit creamier. I copied the recipe that a previous person posted, though. I think I'll make some this week.

I use tinned tomato pulp or tomato paste. I add minced sauted onion, green peas, chicken or vegetable stock and boil all with tomato paste/pulp and boil. adjust salt and pepper.

I dont make Tomato soup. I dont care for it nor do I care for Tomato juice. but I love tomato's can you figur that
