Salted Egg Preparation

Good morning, and evening or night to some parts of the world. Yesterday I saw there was some discussion about eggs, and remembered my mother's favorite food which is salted eggs, which are made from duck eggs which are thicker skinned, and slightly larger in size than chicken eggs. Making salted eggs can be in several ways. Some soaked it in a salt solution, covered it with salt mixture, and covered it with salt mixture and rub ash/red brick powder. The last method is a traditional method that you can practice yourself at home. Here are the steps to make it. material 1. Prepare 10-30 quality duck eggs, 1.5 kg of rub ash or red brick powder, 0.5 kg of table salt, and clean water. if you want to try it yourself use eggs to taste according to taste. 2. Tools Also prepare a plastic bucket, sandpaper, pan, stirrer, and egg storage container. 3. Process Prepare water in a plastic bucket. Wash all raw eggs. Can use a toothbrush to remove stains on the surface of the egg. After that, wipe and dry the eggs. Gently rub the surface of the egg with sandpaper. The goal is that the pores of the egg open and the mixture for marinating can seep into the egg. In a separate saucepan, make the egg salting mixture. The trick, mix ash / red brick powder with salt using a ratio of 1:1. For example, 1 kg of rubbing ash with 1 kg of salt. Add water to this mixture and stir until it becomes like a paste. Coat the eggs one at a time with the mixture, about 1-2 mm thick. Store eggs in a crock pot or plastic bucket for 15-20 days. The longer the storage time, the saltier the eggs will be. After the specified time, clean the salted egg from the salting mixture. Eggs are ready to be processed further. Can be boiled or steamed. 4. Tips Make sure the eggs are of good quality, not cracked or rotten. To find out, soak the eggs in water. If it floats, it means the egg is old, you should not use it. Some people re-soak the eggs in the tea solution after cleaning them of the salty mixture. Soaking time is about 8 days. This method aims to increase the resistance of salted eggs up to 6 weeks. The use of tea leaf extract also makes the eggs light brown in color with a more pleasant aroma. These salted eggs can be eaten with friends, you can also eat them directly

The salty eggs are common food here. In fact I also tried to make it with normal eggs rather than duck eggs because duck eggs are much more expensive here. My method is a little different than yours but I know both can work well Here is the recipe from me

This doesn't sound like my cup of tea, despite my love for eggs. That being said, I have always been curious to eat a duck egg. But I'd likely fry it or scramble it.
