Now it's hot. The kind of hot that forces you to sit still, preferably under a ceiling fan, sipping a cold drink. You can almost hear the garden growing. Everyone slows down. It's so hot you don't want to cook - not for anybody! But you still have to eat! Got a no cook idea...Here's mine
Chicken Tomato Wrap Sandwich
Get some flour tortillas for this easy wrap sandwich. You could also use any meat; chopped ham would be delicious.
INGREDIENTS:
2 cups cubed cooked chicken breast
1/4 cup honey dijon salad dressing
1/4 cup mayonnaise
1 green pepper, chopped
2 tomatoes, chopped
4 slices Muenster cheese
4 lettuce leaves
4 flour tortillas
PREPARATION:
In medium bowl combine chicken, salad dressing, mayonnaise, green pepper, and tomatoes and toss to coat well. Place tortillas on work surface and line with lettuce leaves and cheese. Divide chicken mixture among tortillas and roll up tightly, enclosing filling.
Wrap in waxed paper and chill until serving time. 4 sandwiches

That sounds nice! Mine isn't as complicated, three slices of bread, butter each side, put marmite ontop of one side, place ham/chicken on one side and a different filling on the other!

Tossed salads, or even fruit salads are nice for days like that. I try to keep it simple yet healthy.
