Dinner Tonight 02/26/22

Am I getting soft in my old age with spending money? I mean, these bad boys run about $3.49 per pound and I can buy pork loin unmarinated and unseasoned for $1.94 per pound, and just do it myself. But these are so easy and so good, I figure what the hell? It is a change from the weekly cooking norm, and it is still cheaper than going out to eat of course. I think it is money well spent, and besides, it will be delicious as these things typically are. And they are so easy to make. On the side I will make some fried potatoes. I will of course put chopped onion in. But I have some zucchini and I am thinking about adding in some of that as well. Why not, right? All good stuff. In addition we will have some salad. Yummy stuff, let me tell you. What's going on your plate tonight for supper?

Looks delicious. Never tried these before but it will be good no doubt. And the potatoes with zucchini will be good too. Had a taco salad earlier. Very good.

They are quick and easy and very good, and I tend to use some of the leftovers to make sandwiches with. Delicious.

@CarolDM I love leftovers. There is a guy at work who will not eat them. He just throws stuff away. It's absurd.

We are gonna have chicken & rice pilaf my mom made, along with kebabs they ordered. And I made cabbage salad. Should be a pretty good dinner.

@porwest It was, though I gave my kebabs to hubby. Wasn't as hungry. And our dinner was close to midnight lol.

I made a roast with all the sides yesterday. There is plenty left for tonight's dinner. I buy pork loins a lot. One of the best buys out there. Up until about six months ago they ran 1.99 a pound but now go for 2.64 a pound. Everything is up now. Ground chuck is over 5 bucks a pound here. I always season my own, my guess is that the prepared loins are running over five dollars a pound too.

I used to buy the unseasoned pork loin roasts, make up a marinade, marinate them for 24 hours, then wrap them in freezer paper and freeze them—much cheaper, and I know they take about 30-25 minutes per pound at 350 so I would write how many pounds on the package and I can still get those at Walmart right now for about $1.99 per pound. It works out considering I have many marinade recipes I use. But sometimes I get lazy. Shame on me. By the way, the end result of this one was damn delicious.

The nice thing about a pork loin is there's usually leftovers for yummy sandwiches. Definitely frugal.

$3.49 a pound is not a lot to spend on a little treat. I had a bowl of tomato penne soup.

They probably are, and I should care since I have high blood pressure and am on medication for it, and doc's got me on a salt restriction. It was delicious though.

It was very good. I liked that it had crumbled bacon on it which crisped up rather nice when I cooked it.
