Fried eggplant

Eggplant I planted a lot of eggplant trees in front of my house. And now it bears fruit.. Yesterday I had fried eggplant and added mayonnaise for topping, it's very dilicious. I often fry some eggplants and add various toppings (such as tomato sauce, sambal, or cheese). Have you ever cooked eggplant?

I cook eggplant quite often. I sometimes steamed them, sometimes fried them with minced pork.
