Accidental butter!

As you know, if we see some bargain in the reduced section of the supermarket, and it’s something we will actually use of course, then we usually buy it and bung it in the freezer for some future use. Many bargains in meat, cheese, fish, fruit or bread have found their way there. In the past I know I have frozen cream, but the results have been mixed. For some uses the results were good, but for others (making ice-cream I seem to remember) it wasn’t quite the same as when made with cream that had never been frozen. The snag is that I can’t remember what worked well and what didn’t. So today when I had a recipe that suggested topping it with whipped cream I defrosted a pot of cream to try. However this was obviously one of the things that isn’t successful because within moments of beating it with an electric whisk it had turned into butter! Never mind, no-one else is particularly fond of whipped cream anyway whereas we do get through quite a lot of butter, so it may be a better use for it! I like a lot whipped cream and I had the same experience when I tried to freeze dairy cream, it turns into butter. Of course I used the butter.

@Fleura The brother of my Mom was a Parmesan producer. The first thing they made was to separate the dairy cream from the milk. The milk was used to make Parmesan, the dairy cream to make butter. To make the batter the dairy cream was chilled, so I am positive in saying that freezing turns it into butter.

Maybe freezing it makes it quicker to turn to butter somehow. Tasty though!

Oh yes heavy cream is finicky that way. At least it didn’t get wasted and can used as butter :)

@shaggin No I didn't. Growing up we always bought salted butter, in fact I don't remember there being any other kind available. And I thought it was necessary - instructions to make butter always ended with adding salt. But about 20 years ago various chefs started calling for unsalted butter in their recipes, and nowadays it is on the supermarket shelves alongside the salted stuff. My partner has a bit of a 'thing' about not adding salt to food, so he has always insisted on getting the unsalted type. So the short answer is no I didn't because we usually have unsalted butter anyway. Do you think it is necessary?

Make yourself a list on your phone or in your tablet so you'll remember what works and what doesn't. I'm glad you ended up with something you could use, at least.

Yes I should make a note somewhere, maybe stick it on the freezer. The butter is nice and certainly good value since the cream was reduced to 18p and a block of butter (of about the same weight as the final product) costs about ten times that nowadays! I will now be keeping my eyes peeled for reduced cream!

I didn't even know you could get such a thing! Surely it takes longer to defrost that just to whip some fresh cream.

@Ronrybs Some things I just can't understand, and yet people still buy them! Frozen cooked rice - why buy that when rice is so easy and simple to cook? And 'easicook' rice I really can't understand either since it actually takes longer to cook than the normal (presumably difficult?) rice and tastes nasty.

One of my grandmothers used to get heavy cream from a farmer friend every week and make butter. Well, I think she timed it so I would be around to churn it, but I don't blame her, her life was so busy. Homemade butter is so good. The prices here for butter are just off the wall now. And that's if you can even find it to buy! I have some in my freezer.

Same here, it has doubled in price over the past year or so. Normally, if we see cream in the reduced section we only buy it if we plan to use it for something sweet, but now I know better, I will be stock-piling it!

I remember whipping cream and taking it a tad too far and suddenly having butter. We snap up bargains when we can.

Yes I remember doing that too, but it didn't happen quite this fast. Maybe I had been using a hand whisk before. Or maybe freezing the cream does something to it that makes it more likely to turn to butter quickly.
