What's for dinner? October 28

What's going on the dinner table tonight? I want to know!
Tonight I'm making a real meal. I'm making roasted boneless skinless chicken thighs rubbed with Emeril's Essence and EVOO. To go with it I'm making StoveTop stuffing and a steamed vegetable medley from the freezer. I've had a lot of pasta lately so I want something different tonight. I will have plenty of leftovers for another couple of lunches or dinners.

I decided, heck, it was a good week in the stock market. Made good money on the job. Time for some Chinese food, and so I had some delivered. Got beef brocolli for myself and orange chicken for the wife and we both had egg rolls and pork fried rice with our entrees. Also got some spring rolls, fried shrimp, shrimp lo mein, shrimp fried rice and crab Rangoon.
It was delicious and we have a ton of leftovers.

I had Meals on Wheels for lunch - Chicken Alfredo. I haven't decided on dinner yet. It's 9:15 pm. Maybe I'll have a piece of leftover pizza.

Not sure yet what we are having, still at treatment center with my son. When he gets done we will figure it out. I have food fixed ahead, so we're good.
I love Emeril Essence on some foods. It's totally wonderful on baked salmon, too.
